When Life Gives you Oranges - use EVERYTHING for muffins

Yes! use the whole orange (except the seeds) for this muffins. A friend of mine, Fiona, requested that I bake her orange muffins as she's been craaaaving for them for the longest time. Poor thing. I so wanted to make muffins which will burst orange goodness in her mouth so I searched the web for a recipe which would use lots of orange zest.
The recipe i found from mybakingaddiction was PERFECT! The Whole orange is used and half a cup of OJ needs to be added. I could smell the tingling zesty smell of oranges just by reading the recipe! The recipe calls for additions of cranberries which I omitted.



And then, I felt that it needed a topping. A crunchy crumbly one. Hmmm..i decided to create one on the fly and the result was - PHENOMENAL! The crumble was such a great complement to the muffins and made it such a hit that my friends were asking for the recipe. Fiona gobbled up 6 muffins in one seating! She's so tiny and slim which made you wonder where all that calories are being stored. Hmmph!

Even my kids were pestering me to bake it again and so within a week of juggling work, cooking for iftar and making raya cookies, I actually baked this cake TWICE! hehe.. Nasib baik la recipe ni mudah la sangat, otherwise, pancit la ummi mereka.



And when I said the recipe is mudah - I REAAAALLLY mean mudah. Easy peasy orange squeezy. you just need a food processor and you're ready to go!

Here's my adaptation of the recipe using mybakingaddiction's recipe as base which I derhakakan. And because the crumble is my own creation, I renamed the whole recipe to Crunchy Orange Muffins.


Crunchy Orange Muffins

1 orange, cut and remove seeds
1/2 cup OJ
1 large egg
1/2 cup butter
1 3/4 cups plain flour
3/4 cup sugar (i lessen it to 1/2 cup)
1 tsp baking powder
1 tsp bicarbonate of soda
 
Crunchy Topping:
1 tbsp of melted butter
1/4 cup castor/ brown sugar
1 tsp cinnamon powder
2 tbsp nestum
1 tsp orange rind

 - Simply mix all of the above. Put aside.

Method:
Preheat oven at 175C.
Puree whole orange in the food processor with the OJ
Add egg and butter, whizz in the processor.
Combine the dry ingredients and add to the orange mixture. Give it a few whizzes (not too much)
Spoon into muffin tin and sprinkle with the topping.
Bake for 20mins and then enjoy the aroma wafting from the oven!
 
 
 
What did I tell ya? Easy, no? Do make these for days you need a perk-me-up the non-caffeine route!
